Aren't most Gravity Galaxies all about Platforming anyway? The level itself is already "a platforming challenge in a gravity galaxy". Here's an idea. At the middle part of Star 1 (after the player experiences how evil the fog is), Mario lands on a round platform with 3 different paths leading away from it. Only one of those leads to a Launch/Sling Star, while one of the other paths lead to a dead end with 3 hammer Bros. and the other one can simply be a dead end, but there's a hole near the dead end so the player would most likely fall though during his first playthrough. (the fog will appear like there's still a path, when there's not). All the paths will also have a few enemies (Goombas/Paragoombas/Choppas) and all will require a tiny bit of platforming skills.
Also, when Mario first reaches that Planet, there could be a sign saying: "Roses are Red. Violets are Blue. The Fog will not Vanish but that will YOU!" It's funny how it's completely opposite at my house SSL. When it comes to the "double Mario" thing, we can get some serious inspiration from the N64 Paper Mario's Crystal Palace, as it has many puzzles involving 2 Marios (one in the mirror and one in the overworld).
Making the 2 Mario switch what sides of a Mirror/Stage they are on is also a neat concept. Also let me get this straight, for the 2 Marios idea thing, did you mean both Marios to be in the same Area at once (Can they interact? like can they jump on each other push each other and so on) or is it like the Crystal Palace where each Mario is restricted to one part/side of an area? Also there should be parts where the 2 Marios need to help each other to advance. For example to get past a Laser field, the first Marios has to press and stand on a "Off Switch" so the second one one can proceed forward, and then the second Mario Mario presses a Switch on the other side of the Lasers so that the first one also can come over. Y'know stuff like that

Maybe we could include a large chasm/put in the middle of or at the end of a jungle where you have to fly all the way down using the Bee Suit while avoiding obstacles (Choppas, Paragoombas, Spiked plants and such) and grabbing coins to extend Mario's flight time. However the coins would not be close to each other, so the player would only need to fly when seeing an obstacle and only if he has to adboid it.
If this sounds too hard for W1 we can instead have Mario simply fall down while avoiding enemies, BUT instead of having to collect coins we can place flowers on the way down which Mario can stand on so he can refill his flight meter. (I suggest the flowers which eat you, so the player has to quickly keep advancing downwards). This idea could be a good way to finish a Star (with the Star being at the bottom)
