Hey, at least I don't cook my top sirloin well-done.

I've eaten salad with dressing made from soy sauce, balsamic vinegar, olive oil, and dijon mustard, but raw egg yolk is a good stand in, though it's kind of messy and slimy, kind of wish there is an easier way to get rid of all the egg white.

Top sirloin has to be cooked either rare or medium rare for me. Any more and it starts being all dry and I have to use Dijon mustard to make it taste palatable.

A good rare/medium rare steak doesn't need ketchup, trust me. All that juicy pink blood and bright red meat are all you need to enjoy a steak.

You like whatever you like. Maybe you don't like juicy steak, but if you like well-done steak, there are better cuts for it, especially ground meat where it HAS to be well-done.

Well-done steak, particularly on cuts like sirloin, is dry, tough, and lacks flavor. It's basically chewing on sawdust. Medium-rare gives off a nice smell, too, though.

Rare steak actually is less juicy than medium-rare because the fibers have less time to render and so when you break them with your teeth, they release less water. I like rare because it's slippery, but tougher to chew than medium-rare.

If I had to order steak doneness, it would be rare = medium rare >>>> medium >>>>> medium-well >>>>>>>>>> well.

And yeah, December is awfully dry for some reason. Acrylic paint dried so fast last time I painted, it's annoying.

As for the whole GOTY, I don't really care for it.

Odyssey didn't deserve it tho. Too overrated.

and it's not hard. marinate steak with some salt for a few hours, heat oil on the pan, wait until the oil is hot, slip on the steak, flip often, and stop cooking once your insta-read thermometer (which I highly recommend) registers 130 to 135 degrees F, though you can aim for even lower since steak still cooks a little while after you stop the fire

best cut for steak is top sirloin IMO

oh and don't let people scare you to eating incinerated sawdust - I mean, well-done steak or pork chops - because they think meat cooked anywhere below 160 (160 degrees is vaporized meat) will be dangerous meat with worms in them. Yeah, there is a risk of eating meat raw, but it should overall be safe to consume medium rare meat, though for some types of meat, especially ground meat, you need to fully cook it to minimize the risk (ground meat is exposed to all kinds of surface contaminants while whole meat, only the surface is exposed, so cooking the surface and leaving the inside raw or barely cooked should be fine).

If you like dark meat of the chicken, you may like duck. Duck is all dark meat. However, duck tastes different from chicken. It tastes... "gamier" and is oilier (the meat is pretty juicy throughout unlike chicken, which can be dry at white meat regions, and the skin of a cantonese or peking duck is heavenly) but that's why I like duck more than chicken.

A real well-done steak is thoroughly cooked and very juicy. Not that shoe sole called "well-done" (more like over-done). And you really shouldn't eat poultry and pork below well-done. Beef, goat, lamb, and seafood should be fine even rare.

And you're also wrong about pork below well-done. It might be true before and during the 90's but today's pork is much cleaner. They dropped the guidelines from 160 degrees to 145 degrees.
