I'd like to know how you edit:
1. the sprite for Balloon Mario (when he gets a Power Flower)
2. the castle paintings
3. the life count character icon
4. and the minimap character icons.
Anyone who knows what I'm talking about, please answer!

1. Balloon Mario is a model. See here.

2. Those are textures. As I probably could not give a very good guide, ask here.

1: As above.

2:
Paintings are stored as BMD models in "/data/pictures". To edit their textures you can open a level, select "3D model" along the top and either:
1)
- Select "Import other model" then select the painting model
- Click on "BTP and Texture editor"
- Here you can replace the texture with your own but it must be of the same dimensions
2)
- Select "Export other model" then select the painting model
- Edit the exported model in eg. Blender
- Export to either DAE or OBJ
- Import the model over the original

3 and 4:
First see this tutorial for minimaps and then once you understand how images are replaced see this answer for how to replace 4 bits-per-pixel images which 3 and 4 both are:
3:

4:
Yoshi and hats:
