Well it's some models that's gray, like the pumpkin in MagicGalaxy. Or the Rainbow Star, its model textures is gray but in-game it has various color. Anyway, the models that's gray or dark, can't change color when you retexture them. I tried to retexture the pumpkin in MagicGalaxy to orange, but nothing did change, it was just the same boring gray. I tried retexture InvisibleMario.bdl (Rainbow Mario) to red, but it was still gray. It's so annoying and I hate that. I tried to make the pumpkin in MagicGalaxy orange to use in my Halloween Galaxy, but it didn't work. The Koopa Troopa is green in-game, but it's real BDL file is gray. I think it's same with them.

Is it something with the model or the material that makes it gray forever? Any ideas?

I think it is the shader which makes it gray. The snake block originally was green, but their shader makes them appear pink.

According to NWPlayer123, it's a tint from the material. He was working on a tool to modify the values, but I'm not sure what happened to that.
