Paths in Super Mario Galaxy are like any other. They are used on moving objects, and use coordinates to know where to move to. This tutorial shows you how to do so.
First, open up a level's MAP file. Then go to "Paths"
Your screen Should look like this:

Choose a path down on the drop down menu:

When you open one path, you'll see this:

You have to fill in the coordinates for X Y and Z as the same thing for X Y and Z.

Now, how do I assign the path to an object? Easy. First, go to the CommonPathInfo.
Look for the "no" setting on the right hand side. Find the "no" of the path you just used.
When you do find it, look at the "I_id" setting.

See the number? Use that number for the CommonPathID of the object you want to use.

You could make the tutorial with Whitehole, since that is what everyone will be using in the future when it's crashing bugs are fixed. :/

They are basically self-said in Whitehole.

Erm.....sort of, but it still could demand a little explanation. :)

Also, you should add your water tutorial here.
